After stepping out of the limelight, from Fox Network’s Hell’s Kitchen, finalist, Chef Guy Vaknin became mindful of the missing ingredients in today’s popular cuisines. Fascinated by the many health benefits associated with a plant-based diet, Chef Guy broke new grounds and pioneered the Beyond Sushi vegan lifestyle brand. Each fruit and vegetable sushi gem is wrapped in either black forbidden rice or a customized six-grain rice blend. Black Rice is a gluten free grain that contains 18 amino acids and has a natural black hue. Beyond Sushi's iron-filled six-grain rice is a medley of rye berries, hulless barley, pearl barley, brown, red, and black rice. Both rice options paired with the seasonal fruit and vegetable fillings, create for exhilarating textures as well as flavor profiles. |

| Often times it is said that people eat with their eyes first, so Chef Guy created aesthetically pleasing, vibrant sushi rolls. He nixed the use of soy sauce, which has high sodium content and accompanies our innovative rolls with tofu and veggie purées. Each menu item is adorned with either Jalapeño Wasabi, Toasted Cayenne, Carrot Ginger, Shiitake Teriyaki, Mango Chili, or White Miso sauce. |
Beyond Sushi encourages a healthy, and wholesome way of living. Our menu is carefully crafted to support, Mother Nature while providing a product and service that is beneficial to everyone. With a multitude of fillings such as baked sweet potato and mango, Beyond Sushi is kid-friendly, fish-friendly, gluten-friendly and even mother-to-be-friendly! Recycled materials from the pre-existing, 200 year old building were used to construct the Beyond Sushi store, reflecting an earthy & natural feeling. Gal Vaknin, of Atal Group Inc. created the chic, organic, and welcoming design utilizing local vendors to construct a rustic and modern backdrop. |
