Beyond Sushi is the pioneer of the plant-based, sushi movement. A 100% vegan eatery that celebrates the flavors and beauty of locally-sourced, seasonal produce. Founded by renowned Chef, Guy Vaknin, and his wife, Tali, Beyond Sushi offers an assortment of distinctive sushi rolls and other nutritional staples at their five outposts in Manhattan.

Chef Guy and his culinary team fuse unconventional pairings of fruit and vegetables with whole grains to create wide-ranging vegan dishes including dumplings, noodle salads, and noodle soups with catchy names such as “Smokey Tom,” “Chic Pea,” and “Jolly Onion.” In addition, the brand has reinvented their signature sushi rolls, rice bed salads, and paper wraps to intrigue the masses.

Beyond Sushi strives to popularize a modern approach to traditional sushi by crafting intricate and wholesome dishes that are as pleasing to the eye as they are to the palate.

After finishing his military duties in the Israeli Defense Force, Israel native, Chef Guy Vaknin moved to New York in 2005 to pursue his dream of working as a Chef in America. He studied at the Institute of Culinary Education in Manhattan. Shortly after graduating, he became the Executive Chef at Esprit Events where he prepared cutting edge dishes for some of the most notable charity galas, corporate functions, and high end weddings, Chef Guy was selected as a contestant on Fox Network’s show, Hell’s Kitchen, Season 10.

On July 1st, 2012, following the completion of the show, Guy pursued a new endeavor and opened Beyond Sushi, a 100% vegan casual eatery. In December 2012, Guy and his future wife Tali joined forces in developing the Beyond Sushi brand. Together in May 2013, they launched their second location in the famous Chelsea Market. In August 2013, Guy and Tali tied the knot. In November 2014, one week before welcoming their first child, they opened the doors to their third Manhattan location in Midtown West. “Having a child created meaning in our lives and gives me a true sense of purpose,” says Chef Guy. “My son is the driving force behind all of my hard work and accomplishments and for that I am very thankful.”

Chef Guy credits his passion for cooking to his Moroccan and Israeli roots and is a huge advocate of sustaining relationships with local farmers to produce ingredients for his restaurants.

Q: Where do you source the ingredients from?

A: We buy local whenever possible. We source many of our ingredients from the Union Square Farmers Market.

Q: Are there gluten-free items on the menu?

A: Most items on our menu can be made gluten free upon request. If you are highly sensitive to gluten, please be advised that cross-contamination can still happen. Therefore we do not recommend you eating at our establishment.

Q: What is your six-grain rice blend made out of?

A: Red rice, short-grain brown rice, black rice, rye berries, hulless barley, and pearl barley.

Q: What is the cancellation policy?

A: Orders can be cancelled 24 hours prior to your event date free of charge. If you cancel with less than 24 hours’ notice, you will be charged in full for your order. For orders above $1,000.00 we request a deposit of 50 %. This deposit is non-refundable if your event is cancelled less than one week prior to your event date.

Q: Can I pick up my order?

A: Yes. You can pick up your order at either one of our locations.

Q: What is the delivery fee for platter orders?

A: Delivery fee is 10% of the subtotal, with a $20 minimum and $120 maximum. We deliver to all of Manhattan, and parts of Brooklyn and Queens. For deliveries that require moving out of borough, we charge an out of borough fee that varies based on location. Gratuity is optional.

Q: How far in advance should I place my order?

A: For platter orders, we request placement 72 hours prior to your event date. For station requests, we ask for one weeks’ notice.
