You don’t need to trick your body into eating something unhealthy this Halloween. You can give yourself plenty of vegan treats, instead! Winter Soups Return at Beyond Sushi

As temperatures drop, nothing is more comforting than a bowl of soup to warm up the body and soul. Just in time to satisfy a soup craving, Beyond Sushi’s custom-made soups are making a return to the menu on October 15.

Our soups offering diners the unique opportunity to create their own bowl from several delicious options of soup bases, fillings, and noodles, in three easy steps:

  • Step One: Select from one of our three house-made bases, each of which boast rich and deep flavors.
    • The first base is Spicy Soup, with heat from gojuchang (a Korean pepper paste), as well as fermented beans, garlic, ginger, and sesame oil.
    • The second base is our house made Coconut Curry, made with the rich coconut milk, Jamaican curry, coriander, garlic,  chickpeas, and notes of brightness from lemongrass and cilantro.
    • The third option is our classic Miso, rich in umami flavor from fermented soybeans.
    • You can also mix two soup broths to create a custom blend.
  • Step Two: Select one of two noodle options, to give your soup body:
    • Soba noodles, which are made from buckwheat flour and nutty in flavor.
    • Udon noodles, which are soft, thick, chewy, and filling. 
  • Step Three: Finish the bowl with your choice of fillings:
    • Filling option 1 includes fresh spinach, shiitake, enoki, and portabella mushrooms, along with sautéed ginger, and roasted garlic.
    • Filling option 2 includes fresh spinach, julienned carrots, baked tofu, asparagus, and cilantro.

With so many possibilities, these soups are sure to keep your taste buds intrigued all soup season long. If you just want a taste, you can order a small bowl of broth to round out a meal.

October Flavors at Beyond Sushi


October summons the transition from summer to fall, and with chillier temperatures comes one of the year's most exciting crops of seasonal vegetables. Hearty fall favorites, including squash and root and cruciferous vegetables, are plentiful, and nourish the body while warming the soul.
To celebrate these flavors, the October Specials at Beyond Sushi highlight some of the season’s signature flavors. In the Roll of the Month, baby arugula, roasted kabocha squash, and avocado come together in earthy harmony, and are given a bright and bold flavor complement when topped with charred carrot, mint and lemon zest.  The hickory smoked guajillo pepper and lemon saffron sauce finish the roll, marrying the flavors of the season together. This dynamic  sauce also tops the October Piece of the Month, complementing the black rice and Cajun roasted Brussels sprouts delicately assembled beneath it.


Kabocha squash is also found in the Salad of the Month, along with Cajun-seasoned Brussels sprouts, a blend of red and white quinoa, fresh cilantro, avocado, chickpeas, and pumpkin seeds atop of bed of baby greens. For a more portable version, the Wrap of the Month is also filled with quinoa, carrots, kabocha squash, creamy avocado, roasted cumin chickpeas, and baby greens, tucked together in a rice paper wrap. With complete proteins and amino acids from the quinoa and added fiber and protein from the chickpeas, these specials are sure to satisfy your appetite, and with the cajun spiced sprouts and cumin chickpeas, they’ll also satisfy a craving for fall flavors.

Curious about some of the ingredients in the October specials? Allow us to elaborate:

Kabocha squash is winter squash native to Japan, and is often called the “Japanese pumpkin,” as it bares resemblance to smaller conventional pumpkins. With a naturally sweet flavor and luscious buttery texture, kabocha squash is a hearty vegetable that roasts beautifully, allowing it’s delicate creamy texture and unique earthy, chestnut-like flavor shine. A highly nutrient-dense food, kabocha squash is low in calories, but boasts an excellent source of dietary fiber, beta-carotene, iron, vitamin C, and many B vitamins.

Brussels sproutsIMG_0681, another nutritional powerhouse, are celebrated in this month’s specials.  A member of the cabbage family, the edible buds have a rustic earthy flavor, brought to life when roasted. Brussels sprouts are not only rich in dietary fiber, but are also an excellent source of antioxidants, including Vitamin K, vitamin C, and phytochemicals, which offer protection from disease and promote cardiac health. The mini cabbages are also rich in many important B vitamins, making them a particularly valuable addition to plant-based diets. 

Quinoa, found in this month’s salad and wrap, is an ancient grain that is more protein-rich than any other grain. Moreover, it’s a source of all essential amino acids, which are necessary in the body to build proteins and promote healthy cell function. Chickpeas, also found in this month’s specials, are legumes, and not only full of dietary fiber, protein, and amino acids, but also offer a unique supply of antioxidants and phytonutrients, amongst important vitamins and minerals, including iron, folate, and zinc.
